Radicchio is a beautiful veg that has a bitter taste when raw but deliciously mellows on the grill. - 1 head radicchio
- Olive oil
- Sea salt flakes
- Preheat a grill pan.
- Quarter the radicchio lengthwise, removing any loose outer leaves.
- Drizzle with olive oil, sprinkle with salt, and place on the hot grill pan.
- Cook on both sides until wilted.
