Date Coconut Balls

While you’re getting your kids ready for school, slip a few of these nutrient-dense snack bites into their lunch. Far better than any cruelty-free candy bar, these date coconut balls are not only healthfully made with love, they are also loaded with kid-friendly taste and texture.

Date Coconut Balls

Ingredients:

  • 1/2 cup vegan butter
  • 8 ounces pitted dates, chopped
  • 3/4 cup chopped pecans
  • 3/4 cup vegan granola
  • 3/4 cup shredded coconut

Directions:

  1. In a heavy saucepan over medium low heat, combine vegan butter and dates.
  2. Cook, stirring constantly, until butter is melted and mixture is well blended.
  3. Let date mixture cool then refrigerate until it is firm enough to be formed into balls.
  4. Stir in pecans and granola. Use your hands to form mixture into 30 balls.
  5. Scatter coconut in a plate and roll balls in coconut to coat.

  1. I just read your ingredients list over, and I really love the idea of using Granol here. I have a tried and true family Coconut Date Balls Recipe (non-vegan) and we always use Rice Krispies. Which makes me wonder…are Rice Krispies not technically “Vegan” even though they’re a corn-based puffed cereal? I’ll have to check the ingredients list the next time I pickup a box for baking.

    I’m definitely going to have to try this one–I love Vegan baked goods! And Coconut Date Balls are one of my favorite snack/dessert items of all time.
