DIY Coconut Almond Milk
Makes 2-1/2 cups
- 1 cup raw almonds
- 2/3 cup unsweetened coconut flakes
- Generous pinch of salt
- 1/4 teaspoon pure vanilla or almond extract
- 1-1/2 cups water
- Maple syrup or agave to sweeten to taste
- Place almonds and coconut in a blender and process until finely ground.
- Add salt, vanilla or almond extract, and water. Blend until smooth.
- Taste and sweeten with maple syrup or agave.
- Keep refrigerated in an airtight container for up to 1 week.
