Veggie Tortilla Wraps
Serves 4
Ingredients:
- 4 whole wheat flour tortillas
- 1/3 cup vegan mayonnaise
- 8 large lettuce leaves
- 1 large red bell pepper, seeded, cut into strips
- 2 ripe but firm avocados, halved, pitted, peeled, sliced
- 1/2 small red onion, sliced
Directions:
- Lay tortillas on a flat surface and spread with mayonnaise.
- Line tortillas with lettuce leaves.
- Evenly divide pepper, avocado, and onion among tortillas.
