Garlic Cashew Dip

Nutty, creamy, garlicky good, this dip is ideal for easy summer entertaining when you’re serving chips, dips, and fuss-free finger food.

Garlic Cashew Dip

Yields 2 cups

Ingredients:

  • 1 cup salted cashews
  • 1 clove garlic, chopped
  • 1/4 cup coconut oil, warmed
  • 1/4 cup extra virgin olive oil
  • 1/2 cup water
  • Zest of 1 lemon
  • Pinch of cayenne
  • Black pepper to taste

Directions:

  1. Combine all ingredients in a blender or food processor and puree until smooth.
  2. Serve immediately or refrigerate in an airtight container for up to 2 weeks.
