Cinnamon Apple Couscous
- 2 cups apple juice
- 1 apple, cored, diced
- 1/4 cup dried currants
- 1 ground cinnamon
- 1 cup whole wheat couscous
- In a medium pan over medium-high heat, combine apple juice, apple, currants, and cinnamon in a saucepan. Bring to a boil.
- Stir in couscous, cover, and remove pan from heat. Let stand 5 minutes.
- Fluff with a fork and serve hot.
