Peach Jalapeno Nachos

Grab the last of the ripe juicy peaches and give your favorite nacho recipe a sweet twist. The delicious combination of sweet, savory, and spicy flavors will surprise you. This is also a tasty vegan tailgating recipe to serve on game day or a fun recipe to celebrate National Hispanic Heritage Month.

Peach Jalapeno Nachos

Serves 8

Ingredients:

  • 6 cups vegan tortilla chips
  • 2 peaches, pitted, diced
  • 3 jalapenos, finely sliced
  • 1/2 cup fresh cilantro, coarsely chopped
  • 8 ounces shredded vegan cheese
  • Guacamole, if desired
  • Vegan sour cream, if desired

Directions:

  1. Preheat oven to 350 degrees F.
  2. Layer chips, peaches, jalapenos, cilantro, and cheese in a baking dish, ending with a layer of cheese.
  3. Bake for 15 minutes or until cheese is melted.
  4. Serve warm with guacamole and non-dairy sour cream.
