Grilled nectarines top my list for yummy summer desserts. Juicy, ripe, smoky, and beautiful, lightly browned caramelized nectarine halves are the most delicious “bowl” for dainty scoops of dairy-free vanilla bean ice cream.
Grilled Nectarines
Serves 4
Ingredients:
- 4 ripe nectarines, halved, pitted
- 1/4 cup agave nectar
- Ground cinnamon for dusting
- Your favorite dairy-free vanilla bean ice cream
Directions:
- Preheat grill to medium and oil the grill grates.
- Brush the cut side of nectarines with agave and spinkle with cinnamon.
- Grill nectarines, turning a few times, for 4 minutes or until decorated with grill marks.
- Place nectarines in cut side up in 4 dessert bowls and top each with a mini scoop of vanilla bean ice cream. Serve immediately.
Cook’s note: For a showy presentation, serve nectarines with a cinnamon syrup, garnished with a cinnamon stick, alongside a trio of ice cream scoops.
