Grilled Nectarines

Grilled nectarines top my list for yummy summer desserts. Juicy, ripe, smoky, and beautiful, lightly browned caramelized nectarine halves are the most delicious “bowl” for dainty scoops of dairy-free vanilla bean ice cream.

Grilled Nectarines

Serves 4

Ingredients:

  • 4 ripe nectarines, halved, pitted
  • 1/4 cup agave nectar
  • Ground cinnamon for dusting
  • Your favorite dairy-free vanilla bean ice cream

Directions:

  1. Preheat grill to medium and oil the grill grates.
  2. Brush the cut side of nectarines with agave and spinkle with cinnamon.
  3. Grill nectarines, turning a few times, for 4 minutes or until decorated with grill marks.
  4. Place nectarines in cut side up in 4 dessert bowls and top each with a mini scoop of vanilla bean ice cream. Serve immediately.

Cook’s note: For a showy presentation, serve nectarines with a cinnamon syrup, garnished with a cinnamon stick, alongside a trio of ice cream scoops.
