Blackberry Cherry Salsa

Fruit salsa is a sweet change from the classic tomato and pepper rendition. This berry salsa can be served as a dip for your vegan entertaining this summer and updated with different fruit for every season (or every trip to the farmers’ market).

Blackberry Cherry Salsa

Makes 2-1/2 cups

Ingredients:

  • 1 cup fresh blackberries
  • 3/4 cup pitted fresh cherries, halved
  • 1/2 cup chopped red onion
  • 2 jalapenos, seeded, minced
  • 1 clove garlic, minced
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons finely grated lime zest
  • Juice of 1 lime
  • Salt and freshly ground black pepper to taste

Directions:

  1. Combine all ingredients in a bowl.
  2. Refrigerate for at least 1 hour, stirring occasionally, before serving.
